Creamed Tuna on Shoestring Potato Sticks

Love it or hate it, this was a common item on the school menu for lunch. My wife still loves to eat this recipe. Again, the ingredients are written exactly as it was in the old cookbook I found.I re-wrote the cooking instructions slightly. I have given the ingredients for the white sauce.

Ingredients:
2 cups celery, cut into 1/2 inch slices
2 cups medium white sauce,(see below)
2- 7 oz cans of tuna
2 Tbs grated cheese
1 can cream of mushroom soup
1 can shoestring potatoes

Directions:
Cook celery in small amount of water until tender-crisp, and drain
Make the white sauce, 4 Tbs butter, 4 Tbs flour, 1/4 tsp salt, 1/4 tsp pepper, 2 cups milk.
Add the celery, tuna, cheese and mushroom soup to the white sauce. Heat through and stir.
Serve over shoestring potatoes.
