Creamed Tuna on Shoestring Potato Sticks Love it or hate it, this was a common item on the school menu for lunch. My wife still loves to eat this recipe. Again, the ingredients are written exactly as it was in the old cookbook I found. I re-wrote the cooking instructions slightly. I have given the ingredients for the white sauce. Ingredients: 2 cups celery, cut into 1/2 inch slices 2 cups medium white sauce,(see below) 2- 7 oz cans of tuna 2 Tbs grated cheese 1 can cream of mushroom soup 1 can shoestring potatoes Directions: Cook celery in small amount of water until tender-crisp, and drain Make the white sauce, 4 Tbs butter, 4 Tbs flour, 1/4 tsp salt, 1/4 tsp pepper, 2 cups milk. Add the celery, tuna, cheese and mushroom soup to the white sauce. Heat through and stir. Serve over shoestring potatoes.

Bloomington Schools Pizza Burgers

 Pizza Burgers I grew up in the 60's and 70's and attended Bloomington, MN public schools.  You can ask anyone around this area and grew up in those days, about the school lunches and I think most would  agree that, they served up some pretty good chow. Some of my favorites were the "Toasty Dogs", (hot dogs with cheese wrapped in a buttered piece of bread, then baked) the, "Flying Saucers" (pretty much, a lunch-meat and cheese sandwich on a round bun) served with, "Tater Tots" perhaps. The turkey and gravy with mashed potatoes, there was an American style "Chow-Mein" and "Creamed Tuna" over shoestring potato sticks. The "Hot Buttered Buns" made from scratch and baked right there, were fantastic! Sure, there were a few things that everybody hated, like the "Lime Green Jello" concoction ! Chow Mein    There seems to be many people that have good memories of the school lunches in the Bloomington, MN school district from the 60's and 70's. I grew up in that era and went to Bloomington schools as well. Now after double checking various sources, here is what I believe to be the original, simple recipe for Bloomington, MN School lunch Chow Mein. Enjoy ! INGREDIENTS: 1-1/2 lbs. Ground beef 3 Cups water 2 Cups celery, chopped 1/2 cup onions, chopped 2 Chicken bouillon cubes 1-1/2 Tbs. Soy sauce 1 tsp. Kitchen bouquet 1 tsp. Salt 1 Cup warm water 6 Tbs. Cornstarch DIRECTIONS: Brown ground beef. Add water, celery and onions, cook until celery is soft but crispy. Add bouillon cubes, soy sauce, salt and kitchen bouquet to above mixture. Thicken with cornstarch and water mixture. Cook until clear, do not boil. Serve over Chow Mein Noodles. I have written it exactly as it was in the cookbook it was from.
